Fresh chorizo must be refrigerated or frozen for safety.
Refrigerator
1-2 days
Store fresh chorizo in its original packaging or tightly wrapped in the coldest part of the refrigerator. Cook within 1-2 days.
Freezer
1-2 months
For best quality, freeze fresh chorizo in airtight packaging or heavy-duty freezer bags. Thaw in the refrigerator before cooking.
Signs of Spoilage
- Sour or off odor
- Slimy or sticky texture
- Dull or grayish discoloration
- Mold growth
Room Temperature Safety
40°F–140°F (4°C–60°C)
Never leave fresh chorizo at room temperature for more than 2 hours. If the temperature is above 90°F (32°C), do not leave it out for more than 1 hour.
Safe Handling
Cook fresh chorizo to an internal temperature of 160°F (71.1°C) as measured with a food thermometer.
Prevent cross-contamination by washing hands, cutting boards, dishes, and utensils with hot, soapy water after they come into contact with raw chorizo.
Do not rinse raw chorizo; this can spread bacteria to your sink and countertops.
