Raw beef should be refrigerated or frozen immediately upon purchase. Do not store at room temperature.

Refrigerator

3-5 days

Store raw chuck roll beef in its original packaging or a sealed container on the lowest shelf of the refrigerator to prevent juices from dripping onto other foods. Maintain refrigerator temperature at 40°F (4°C) or below.

Freezer

6-12 months

For best quality, wrap chuck roll beef tightly in heavy-duty aluminum foil, freezer paper, or place in a freezer bag, removing as much air as possible. Freeze at 0°F (-18°C) or below.

Signs of Spoilage

  • Sour or off-odor
  • Slimy or sticky texture
  • Dull, brownish-gray, or greenish discoloration
  • Mold growth

Safe Handling

Thaw frozen chuck roll beef in the refrigerator, in cold water (changing water every 30 minutes), or in the microwave. Never thaw on the counter at room temperature.

Cook all raw beef to a safe minimum internal temperature. For roasts, steaks, and chops, cook to 145°F (63°C) as measured with a food thermometer, and allow to rest for 3 minutes before carving or consuming.

Prevent cross-contamination by using separate cutting boards, plates, and utensils for raw and cooked meat. Wash hands thoroughly with soap and water before and after handling raw meat.
