For very short-term storage (1-2 days), keep stems in a glass of water, loosely covered with a plastic bag, at room temperature. For longer storage, refrigeration is required.

Refrigerator

7-10 days

Store unwashed fresh cilantro in the refrigerator. Place stems in a glass of water, cover loosely with a plastic bag, or wrap in a damp paper towel and place in a plastic bag or airtight container.

Freezer

10-12 months

Wash, dry, and chop cilantro. Freeze in ice cube trays with water or olive oil, then transfer to airtight freezer bags. Alternatively, spread chopped cilantro on a baking sheet to freeze, then transfer to freezer bags.

Signs of Spoilage

  • Wilting or limp leaves
  • Yellowing or browning of leaves
  • Dark or black spots
  • Slimy or mushy texture
  • Off-odor or sour smell
  • Presence of mold

Room Temperature Safety

The 2-hour rule applies: perishable foods, including fresh herbs, should not be left at room temperature for more than 2 hours.

The danger zone for bacterial growth is between 40°F (4°C) and 140°F (60°C).

If the ambient temperature is above 90°F (32°C), fresh cilantro should not be left out for more than 1 hour. Promptly refrigerate or discard after these time limits.
