If purchased at room temperature, consume within 2 hours. If purchased refrigerated, do not store at room temperature for more than 2 hours.
Refrigerator
3-4 days
Store in an airtight container to prevent drying and absorption of odors. Allow to come to room temperature briefly before serving for best texture.
Freezer
1-2 months
Wrap individual daifuku tightly in plastic wrap, then place in a freezer-safe bag or airtight container. Thaw in the refrigerator or at room temperature for a short period before serving.
Signs of Spoilage
- Mold growth
- Off-odor (sour or fermented smell)
- Slimy or sticky texture
- Discoloration
- Hard or dry texture (for the mochi portion)
Room Temperature Safety
The 'Danger Zone' for bacterial growth is between 40°F (4°C) and 140°F (60°C).
To ensure safety, refrigerate commercial daifuku promptly after purchase or preparation, and do not allow it to remain in the danger zone for extended periods.
