Commercial MayonnaiseShelf Life, Storage, and Spoilage Guide
Pantry
Up to 'Best by' date (unopened)
Store unopened commercial mayonnaise in a cool, dry place away from direct sunlight. Once opened, it must be refrigerated.
Refrigerator
2 months (opened)
Always refrigerate commercial mayonnaise promptly after opening. Keep tightly sealed to prevent spoilage and absorption of odors.
Freezer
Not RecommendedNot recommended
Freezing mayonnaise causes the emulsion to break, resulting in an oily, separated, and unappetizing product once thawed.
Signs of Spoilage
- Off-odor (sour, rancid, or unpleasant smell)
- Significant change in color (darkening or unusual tint)
- Mold growth
- Separation of ingredients (oily layer on top, watery bottom)
- Unusual texture (lumpy, watery, or excessively thick)

Safe Handling
Always refrigerate commercial mayonnaise immediately after opening.
Do not leave mayonnaise at room temperature for more than 2 hours (1 hour if the temperature is above 90°F/32°C).
Use clean utensils to scoop mayonnaise to prevent cross-contamination.
