Cooked lengua should not be stored at room temperature for extended periods.

Refrigerator

3-4 days

Store cooked, cut lengua in shallow, airtight containers to ensure rapid cooling and prevent bacterial growth. Place in the coldest part of the refrigerator.

Freezer

2-6 months

For best quality, wrap cooked, cut lengua tightly in heavy-duty aluminum foil or freezer wrap, or place in heavy-duty freezer bags. Label with the date.

Signs of Spoilage

  • Sour or off odor
  • Slimy texture
  • Mold growth
  • Discoloration (e.g., greenish or grayish spots)

Room Temperature Safety

Perishable foods should not be left at room temperature for more than 2 hours. If the temperature is above 90°F (32°C), food should not be left out for more than 1 hour.

The 'Danger Zone' for bacterial growth is between 40°F (4°C) and 140°F (60°C).

Always refrigerate or freeze cooked lengua promptly. Discard any cooked lengua left in the danger zone for too long.
