Room Temperature Safety

The 2-hour rule states that perishable foods, including cooked salmon, should not be left at room temperature for more than 2 hours. If the ambient temperature is above 90°F (32°C), the limit is reduced to 1 hour.

The 'Danger Zone' for food is between 40°F (4°C) and 140°F (60°C), where bacteria can multiply rapidly.

Promptly refrigerate cooked salmon within 2 hours of cooking or removal from heat. Discard any cooked salmon left in the danger zone for too long.
