Fresh corn rapidly loses sweetness and quality at room temperature. Store in the refrigerator immediately after purchase.

Refrigerator

Store unhusked in a plastic bag in the refrigerator. Do not wash before storing.

Freezer

8-12 months

For best quality, blanch corn on the cob (7-11 minutes depending on size) or kernels (4 minutes) before freezing. Cool quickly, drain, and pack into freezer bags or containers, removing as much air as possible.

Signs of Spoilage

  • Mold growth
  • Slimy or mushy texture on kernels or husks
  • Sour or off odor
  • Discoloration (dark spots or unusual yellowing)
  • Dry, shriveled, or dented kernels

Room Temperature Safety

Do not leave fresh corn at room temperature for more than 2 hours. If the temperature is above 90°F (32°C), do not leave it out for more than 1 hour, as bacteria can multiply rapidly in the danger zone.
