Fresh corn on the cob rapidly loses sweetness and moisture at room temperature. Refrigeration is highly recommended immediately after purchase.
Refrigerator
1-3 days
Store unhusked corn on the cob in a plastic bag or wrapped tightly in the refrigerator to retain moisture and sweetness. Do not wash before storing.
Freezer
8-12 months (blanched)
For best quality, blanch whole cobs (7-11 minutes depending on size) or kernels (4 minutes) before freezing. Cool quickly in ice water, drain, then pack into freezer bags or containers. Whole cobs should be wrapped tightly.
Signs of Spoilage
- Slimy or mushy kernels
- Sour or off odor
- Mold growth (fuzzy spots, discoloration)
- Dark spots or significant discoloration on kernels or husk
- Dry, shriveled, or dented kernels
Room Temperature Safety
40°F–140°F
Refrigerate raw corn on the cob promptly to maintain quality and slow the conversion of sugar to starch. Cooked corn must be refrigerated within the 2-hour rule to prevent bacterial growth.
Safe Handling
Wash hands thoroughly with soap and water before and after handling fresh produce.
Wash corn under running water just before preparing or cooking, even if you plan to peel it.
Avoid cross-contamination by using separate cutting boards and utensils for raw produce and raw meat, poultry, or seafood.
Cook corn to desired tenderness; internal temperature is not a primary safety concern for raw corn, but cooked corn should be handled safely.
