Cotija cheese should always be refrigerated to maintain quality and safety, even if unopened.

Refrigerator

3-4 weeks (opened), 2-4 months (unopened)

Store tightly wrapped in plastic wrap or aluminum foil, or in an airtight container, in the coldest part of the refrigerator. Do not store in the door.

Freezer

6 months for best quality, safe indefinitely at 0°F (-18°C)

Wrap tightly in plastic wrap, then in aluminum foil, or place in a heavy-duty freezer bag. Freezing may alter the texture, making it more crumbly.

Signs of Spoilage

  • Visible mold (other than intentional mold on certain cheeses)
  • Off-odor or sour smell
  • Slimy or unusually soft texture
  • Significant discoloration

Room Temperature Safety

2-hour rule (1 hour if ambient temperature is above 90°F/32°C)

40°F–140°F (4°C–60°C)

Do not leave Cotija cheese at room temperature for more than 2 hours. Discard if left out longer.
