1-2 years (uncooked)

Store uncooked couscous in a cool, dry place in an airtight container away from moisture and pests. Cooked couscous should not be stored in the pantry.

Refrigerator

3-4 days (cooked)

Refrigerate cooked couscous promptly within 2 hours in a shallow, airtight container. Uncooked couscous does not require refrigeration.

Freezer

1-2 months (cooked)

Freeze cooked couscous in airtight freezer-safe containers or heavy-duty freezer bags. Thaw in the refrigerator. Uncooked couscous does not require freezing.

Signs of Spoilage

  • Uncooked (dry): Presence of insects, moisture, mold, or off-odors.
  • Cooked: Sour or off-odor, slimy texture, visible mold, or discoloration.

Room Temperature Safety

The 2-hour rule applies to cooked couscous: do not leave at room temperature for more than 2 hours. If the temperature is above 90°F (32°C), discard after 1 hour.

Cooked couscous should be cooled rapidly and refrigerated or frozen to prevent bacterial growth within the danger zone.
