Store dry couscous in its original packaging or an airtight container in a cool, dry place away from direct sunlight. Once opened, transfer to an airtight container to protect from moisture and pests.
Refrigerator
3-4 days
Refrigerate cooked couscous in shallow, airtight containers within 2 hours of cooking. Do not overfill containers to allow for rapid cooling.
Freezer
2-3 months
Freeze cooked couscous in airtight freezer-safe containers or heavy-duty freezer bags. Label with the date. Thaw in the refrigerator before reheating.

Room Temperature Safety
The 'Danger Zone' for bacterial growth is between 40°F (4°C) and 140°F (60°C).
Always refrigerate or freeze cooked couscous promptly to prevent the growth of harmful bacteria. Discard any cooked couscous left in the danger zone for too long.
Safe Handling
Cook dry couscous thoroughly according to package directions, typically by adding boiling water or broth.
Refrigerate cooked couscous promptly within 2 hours after cooking.
Do not leave cooked couscous at room temperature for more than 2 hours (or 1 hour if the temperature is above 90°F/32°C).
Reheat cooked couscous to an internal temperature of 165°F (74°C).
