Prepared creamy sauces containing dairy and mushrooms are highly perishable and should not be stored at room temperature.
Refrigerator
3-4 days
Store promptly in a shallow, airtight container. Ensure the refrigerator temperature is maintained at or below 40°F (4°C).
Freezer
3-4 months
While safe to freeze, creamy sauces may separate or change texture upon thawing due to the dairy content. Freeze in airtight containers or heavy-duty freezer bags. Thaw in the refrigerator.
Signs of Spoilage
- Sour or off-odor
- Visible mold growth
- Discoloration
- Slimy or unusually thick texture
- Excessive separation of ingredients
Room Temperature Safety
40°F–140°F (4°C–60°C)
Perishable foods, including creamy sauces, should not be left at room temperature for more than 2 hours. If the ambient temperature is above 90°F (32°C), the limit is 1 hour.
Safe Handling
Refrigerate promptly within 2 hours of cooking. If the ambient temperature is above 90°F (32°C), refrigerate within 1 hour.
Reheat thoroughly to an internal temperature of 165°F (74°C).
Do not leave reheated sauce out at room temperature.
Avoid cross-contamination by using clean utensils and containers.
