Crema is a perishable dairy product and must be refrigerated. Do not store at room temperature.
Refrigerator
1-3 weeks
Keep crema refrigerated at 40°F (4°C) or below. Keep tightly covered after opening to prevent contamination and absorb odors.
Freezer
Not recommended for quality; safe indefinitely at 0°F (-18°C)
While safe indefinitely, freezing crema is not recommended due to changes in texture (separation, graininess) upon thawing. If frozen, thaw in the refrigerator and stir well before use; it may be best suited for cooking rather than direct consumption.
Signs of Spoilage
- Sour or off odor
- Visible mold growth
- Significant discoloration (e.g., yellowing or green spots)
- Unusual texture, such as excessive liquid separation, sliminess, or graininess
Room Temperature Safety
The 'Danger Zone' for bacterial growth is between 40°F (4°C) and 140°F (60°C).
Always refrigerate crema promptly after purchase and use. Discard any crema that has been exposed to temperatures within the danger zone for longer than the recommended time limits.
Safe Handling
Always keep crema refrigerated at 40°F (4°C) or below.
Do not leave crema at room temperature for more than 2 hours (1 hour if the temperature is above 90°F/32°C).
Use clean utensils to scoop crema to prevent introducing bacteria.
Discard any crema that has been left in the temperature danger zone (40°F-140°F) for too long.
