Creme brulee contains dairy and eggs and must be refrigerated to prevent bacterial growth.

Refrigerator

Store in a shallow, airtight container or covered tightly with plastic wrap to prevent absorption of odors and drying out. Do not add the caramelized sugar topping until just before serving.

Freezer

2-3 months

While safe to freeze, the texture of creme brulee may become grainy or watery upon thawing due to its custard base. Freeze in individual ramekins, covered tightly with plastic wrap and then foil. Thaw overnight in the refrigerator.

Room Temperature Safety

The 2-hour rule: Perishable foods should not be left at room temperature for more than 2 hours. If the ambient temperature is above 90°F (32°C), the limit is 1 hour.
