Fresh curry leaves rapidly lose moisture and flavor at room temperature. For very short-term storage (less than a day), keep them in a cool, dry place away from direct sunlight.
Refrigerator
7-10 days
Wrap fresh curry leaves in a slightly damp paper towel, then place them in a sealed plastic bag or an airtight container. Store in the crisper drawer of the refrigerator.
Freezer
10-12 months
Wash and thoroughly pat dry the curry leaves. You can freeze them whole or chopped. Spread them in a single layer on a baking sheet to flash freeze, then transfer to an airtight freezer bag or container. Alternatively, blend with a small amount of oil and freeze in ice cube trays.
