Once cut, peppers should be refrigerated promptly. Whole, uncut peppers can be stored in a cool, dark place for 1-2 weeks.
Refrigerator
3-4 days
Store cut peppers in a clean, airtight container or sealed plastic bag in the refrigerator at 40°F (4°C) or below.
Freezer
10-12 months
Wash, core, and slice or dice peppers. Spread in a single layer on a baking sheet to freeze, then transfer to freezer bags or containers, removing as much air as possible. Blanching is optional but helps retain color and texture.
Signs of Spoilage
- Soft or mushy texture
- Slimy surface
- Off-odor or sour smell
- Visible mold growth
- Discoloration (dark spots or dullness)
Room Temperature Safety
The 'Danger Zone' for food is between 40°F (4°C) and 140°F (60°C), where bacteria can multiply rapidly.
To ensure safety, refrigerate cut peppers promptly. If they have been left out within the danger zone for longer than the recommended time, they should be discarded.
Safe Handling
Wash hands thoroughly with soap and water before and after handling fresh produce.
Wash whole peppers under running water before cutting, even if you plan to peel them.
Use clean cutting boards, utensils, and dishes to prevent cross-contamination.
Keep cut peppers refrigerated at 40°F (4°C) or below.
Discard any cut peppers left at room temperature for more than 2 hours (1 hour if the temperature is above 90°F/32°C).
