Cut vegetables are highly perishable and should be refrigerated immediately after preparation to maintain safety and quality.
Refrigerator

Store cut vegetables in clean, airtight containers or sealed bags in the refrigerator at 40°F (4°C) or below. Keep them separate from raw meats.
Freezer
8-12 months
For best quality, most vegetables should be blanched (briefly cooked in boiling water then plunged into ice water) before freezing. Pack blanched, cooled, and dried vegetables into airtight freezer bags or containers, removing as much air as possible.
Signs of Spoilage
- Slimy or sticky texture
- Off-odor or sour smell
- Visible mold growth
- Significant discoloration (e.g., browning, black spots)
- Soft or mushy spots
Room Temperature Safety
The 'Danger Zone' for food is between 40°F (4°C) and 140°F (60°C), where bacteria can multiply rapidly.
Always refrigerate cut vegetables promptly. Discard any cut vegetables that have been left in the 'Danger Zone' for longer than the recommended time limits.
Safe Handling
Wash hands thoroughly with soap and water before and after handling produce.
Wash all whole, uncut produce under running tap water, even if you plan to peel it. Rub produce gently with your hands or a clean vegetable brush.
Use clean cutting boards, dishes, utensils, and countertops when preparing cut vegetables.
Keep cut vegetables separate from raw meat, poultry, and seafood to prevent cross-contamination.
Refrigerate cut vegetables promptly after preparation.
