Consume immediately or refrigerate. Mochi can harden quickly at room temperature.
Refrigerator
1-2 days
Store in an airtight container to prevent drying and absorption of odors. Mochi may harden; allow to come to room temperature briefly before eating for best texture.
Freezer
1-2 months
Wrap individual daifuku tightly in plastic wrap, then place in an airtight freezer-safe bag or container. Thaw in the refrigerator overnight or at room temperature for a few hours. Texture may change slightly upon thawing.
Signs of Spoilage
- Mold growth on the mochi or filling
- Sour, yeasty, or off-odor
- Slimy or sticky texture (beyond normal mochi stickiness)
- Discoloration of the mochi or filling
Room Temperature Safety
40°F–140°F (4°C–60°C)
Perishable daifuku (especially those with fresh fruit or dairy fillings) should not be left at room temperature within the danger zone for more than 2 hours. Discard if left out longer.
Safe Handling
Always wash hands thoroughly with soap and water before and after handling food.
Keep daifuku with perishable fillings refrigerated at 40°F (4°C) or below.
Avoid leaving daifuku with perishable fillings at room temperature for more than 2 hours (1 hour if the ambient temperature is above 90°F/32°C).
