Deli meat must be kept refrigerated to prevent bacterial growth.
Refrigerator
3-5 days
Store in a tightly sealed container or original packaging in the coldest part of the refrigerator. Consume within 3-5 days after opening.
Freezer
1-2 months
For best quality, wrap deli meat tightly in freezer paper or heavy-duty aluminum foil, or place in a heavy-duty freezer bag. Label with the date.
Signs of Spoilage
- Sour or off-odor
- Slimy or sticky texture
- Discoloration (e.g., green or gray spots)
- Presence of mold
Room Temperature Safety
The 'Danger Zone' for bacterial growth is between 40°F (4°C) and 140°F (60°C).
Promptly refrigerate or discard deli meat that has been left out at room temperature beyond the recommended time limits.
Safe Handling
Always keep deli meat refrigerated at 40°F (4°C) or below.
Avoid cross-contamination by using separate cutting boards and utensils for deli meat and other foods, especially raw meats.
Wash hands thoroughly with soap and water before and after handling deli meat.
Do not leave deli meat at room temperature for more than 2 hours (or 1 hour if the temperature is above 90°F/32°C).
