Once opened or homemade, demi-glace is perishable and should not be stored at room temperature. Unopened, shelf-stable commercial demi-glace should be stored according to package directions.

Refrigerator

3-4 days

Store in a clean, airtight container. Reheat thoroughly to 165°F (74°C) before serving.

Freezer

2-3 months (for best quality, safe indefinitely)

Freeze in small, portion-sized containers or ice cube trays. Transfer frozen cubes to a freezer bag or airtight container. Label with the date.

  • Unusual taste
  • Mold growth
  • Discoloration
  • Slimy or sticky texture

Room Temperature Safety

2-hour rule (1 hour above 90°F/32°C)

40°F–140°F

Perishable foods, including demi-glace, should not be left at room temperature for more than 2 hours. If the ambient temperature is above 90°F (32°C), the limit is 1 hour. Discard any demi-glace left out longer than these times.
