Raw diced bacon is a perishable meat product and should not be stored at room temperature. It must be kept refrigerated or frozen.
Refrigerator

Store raw diced bacon in its original packaging or in a tightly sealed container to prevent cross-contamination. Place on the lowest shelf of the refrigerator to avoid drips onto other foods.
Freezer

For best quality, freeze raw diced bacon in its original packaging or in airtight freezer bags, removing as much air as possible. Label with the date of freezing.
Signs of Spoilage

- Discoloration (e.g., green, brown, or gray spots)
- Mold growth
Room Temperature Safety
The 'Danger Zone' for bacterial growth is between 40°F (4°C) and 140°F (60°C).
Refrigerate or freeze raw diced bacon promptly after purchase. Discard any bacon left in the danger zone for longer than the recommended time.
Safe Handling
Cook raw diced bacon thoroughly until crisp. While specific internal temperatures are not typically measured for bacon strips, ensure it reaches a safe temperature to eliminate pathogens.
Prevent cross-contamination by keeping raw bacon separate from other foods, especially ready-to-eat items. Use separate cutting boards, utensils, and plates.
