Diced bell peppers are perishable and should be refrigerated promptly. Whole, uncut bell peppers can be stored at room temperature for a few days, but once cut, refrigeration is essential.
Refrigerator
3-4 days
Store diced red bell pepper in a clean, airtight container or a sealed plastic bag in the refrigerator's crisper drawer. Do not wash until just before use to prevent premature spoilage.
Freezer
10-12 months
Wash, core, and dice the bell pepper. For best quality, spread diced pieces in a single layer on a baking sheet and freeze until solid. Transfer to airtight freezer bags or containers, removing as much air as possible. Blanching is optional but can help retain color and texture.
Signs of Spoilage
- Soft or mushy texture
- Slimy film on the surface
- Off-odor or sour smell
- Visible mold growth
- Significant discoloration or dark spots
Room Temperature Safety
The 'Danger Zone' for bacterial growth is between 40°F (4°C) and 140°F (60°C).
Promptly refrigerate or freeze diced bell peppers after preparation. Discard any diced bell peppers left at room temperature for longer than 2 hours (or 1 hour if above 90°F/32°C).
