Pantry

Store whole, uncut durian at room temperature until ripe. Once cut, durian flesh should not be stored at pantry temperatures due to rapid spoilage and strong odor.
Refrigerator
3-5 days (whole, ripe); 3-5 days (flesh, cut)
Store whole, ripe durian in the refrigerator to extend shelf life, preferably in an airtight container to contain its strong odor. Cut durian flesh must be stored promptly in an airtight container to prevent odor transfer and maintain freshness.
Freezer
8-12 months (flesh)
Durian flesh can be frozen. Remove flesh from the shell, portion, and store in heavy-duty freezer bags or airtight containers. For best quality, consume within 8-12 months. It remains safe indefinitely at 0°F (-18°C).
Signs of Spoilage
- Strongly sour or fermented odor (beyond its natural pungent smell)
- Slimy or mushy texture
- Visible mold growth
- Significant discoloration or darkening of the flesh
Room Temperature Safety
The 'Danger Zone' for food is between 40°F (4°C) and 140°F (60°C), where bacteria can multiply rapidly.
Always refrigerate cut durian promptly. If left out for too long, discard it to prevent foodborne illness.
Safe Handling
Wash hands thoroughly with soap and water before and after handling durian.
Use clean cutting boards and utensils when preparing durian to prevent cross-contamination.
Promptly refrigerate or freeze cut durian flesh in airtight containers to minimize odor transfer to other foods.
Do not leave cut durian at room temperature for more than 2 hours (1 hour if the temperature is above 90°F/32°C).
