Unopened, some hard cheeses can be stored in a cool, dry pantry for a short period, but refrigeration is always recommended for optimal quality and safety once opened.
Refrigerator
3-4 weeks (opened)
Wrap tightly in plastic wrap, aluminum foil, or wax paper, then place in an airtight container or resealable bag. Store in the cheese drawer or a less cold part of the refrigerator.
Freezer
6 months (for best quality); safe indefinitely
For best quality, wrap cheese tightly in plastic wrap, then in heavy-duty aluminum foil or a freezer bag. Thaw slowly in the refrigerator.
Signs of Spoilage
- Visible mold (other than intentional mold on certain cheeses)
- Sour or off-odor
- Slimy or unusually hard texture
- Significant discoloration
Room Temperature Safety
The 'Danger Zone' for bacterial growth is between 40°F (4°C) and 140°F (60°C).
Refrigerate Emmental cheese promptly after purchase and after each use. Discard any cheese left in the danger zone for too long.
Safe Handling
Always wash hands thoroughly with soap and water before and after handling cheese.
Use clean utensils and cutting boards to prevent cross-contamination.
If mold appears on hard cheese, cut off at least 1 inch around and below the mold spot. Do not eat soft cheese with mold.
Keep cheese refrigerated at 40°F (4°C) or below.
