Pantry

Not Recommended

Not recommended once opened

Store unopened cheese in a cool, dark place until the 'best by' date, but refrigeration is recommended for optimal quality and to extend shelf life. Once opened, always refrigerate.

Refrigerator

3-4 weeks

Store tightly wrapped in plastic wrap or aluminum foil, or in an airtight container, to prevent drying out and absorb odors. Store in the cheese drawer or warmest part of the refrigerator.

Freezer

6 months for best quality

Wrap tightly in plastic wrap, then in aluminum foil, or place in a heavy-duty freezer bag. Freezing may alter the texture, making it more crumbly, but it remains safe to eat.

Signs of Spoilage

  • Visible mold (other than intentional molds on certain cheeses like blue cheese, but not typical for Etorki)
  • Off-odor, such as a sour or ammonia-like smell
  • Slimy or unusually sticky texture
  • Significant discoloration

Room Temperature Safety

Per the 2-hour rule, perishable foods, including cheese, should not be left at room temperature for more than 2 hours. If the ambient temperature is above 90°F (32°C), the limit is reduced to 1 hour.

The 'Danger Zone' for bacterial growth is between 40°F (4°C) and 140°F (60°C).

Promptly refrigerate Etorki cheese after purchase and use. Discard any cheese left in the Danger Zone for too long.

Expert Tips

Safe Handling

1

Always wash hands before and after handling cheese.

2

Keep cheese covered to prevent contamination and drying.

3

Cut away at least 1 inch around and below any mold spots on hard and semi-hard cheeses. Discard soft cheeses with mold.

4

Avoid cross-contamination by using separate cutting boards and utensils for cheese and raw meats.
