Refrigerator

3-5 days (opened)

Once opened, transfer evaporated milk to a clean, airtight container (glass or plastic) immediately. Do not store in the can.

Freezer

Not recommended (quality suffers)

Freezing is not recommended as it can cause separation and a grainy texture, affecting the quality and consistency of the milk. If freezing for safety, transfer to a freezer-safe, airtight container, leaving headspace.

Signs of Spoilage

  • Sour or off odor
  • Mold growth
  • Discoloration
  • Unusual texture (e.g., curdled, lumpy)
  • Bulging or leaking can (for unopened product)

Room Temperature Safety

The 2-hour rule: Perishable foods should not be left out at room temperature for more than 2 hours. If the ambient temperature is above 90°F (32°C), the limit is 1 hour.

The 'Danger Zone' for bacterial growth is between 40°F (4°C) and 140°F (60°C).

Opened evaporated milk should be refrigerated within 2 hours of being left at room temperature. Discard if left out longer than the recommended time.
