Raw meat should not be stored at room temperature due to rapid bacterial growth.

Refrigerator

3-5 days

Store raw flank steak in its original packaging or in a sealed container on the lowest shelf of the refrigerator to prevent juices from dripping onto other foods.

Freezer

6-12 months

For best quality, wrap flank steak tightly in heavy-duty foil, plastic wrap, or freezer paper, or place in a freezer bag, removing as much air as possible.

Signs of Spoilage

  • Slimy or sticky texture
  • Dull, grayish-brown, or greenish discoloration
  • Mold growth

Room Temperature Safety

The 2-hour rule applies: Do not leave flank steak at room temperature for more than 2 hours. If the ambient temperature is above 90°F (32°C), do not leave out for more than 1 hour.

The danger zone for food is between 40°F (4°C) and 140°F (60°C), where bacteria can multiply rapidly.

Refrigerate or freeze flank steak promptly after purchase. Discard any raw flank steak left in the danger zone for too long.
