Cheese should generally be refrigerated for safety and quality. Unopened hard cheese may last until its 'Best By' date in a cool, dark place, but refrigeration is preferred for optimal safety and quality.
Refrigerator
3-4 weeks (opened); 6 months (unopened)
Store tightly wrapped in plastic wrap or aluminum foil, or in an airtight container, in the coldest part of the refrigerator.
Freezer
6 months
Wrap tightly in plastic wrap, then in aluminum foil or a freezer bag. Freezing may alter the texture, making it more crumbly, but it remains safe to eat. Best used for cooking after thawing.
Signs of Spoilage
- Visible mold (other than intentional mold on certain cheeses; discard if mold appears on hard cheese where it shouldn't be or if it's fuzzy/discolored)
- Off-odor (sour, ammonia-like, or putrid smell)
- Slimy or unusually soft texture
- Discoloration beyond the natural color of the cheese
Room Temperature Safety
The 'Danger Zone' for bacterial growth is between 40°F (4°C) and 140°F (60°C).
Promptly refrigerate cheese after purchase and use. If serving, place only a small amount out at a time and replenish as needed to keep the majority refrigerated.
Safe Handling
Wash hands thoroughly with soap and water before and after handling cheese.
Avoid cross-contamination by using clean utensils and cutting boards for cheese.
Do not leave cheese at room temperature for more than 2 hours (1 hour if the temperature is above 90°F/32°C).
