Fresh corn rapidly loses sweetness and quality at room temperature. Refrigerate immediately for best quality and safety.
Refrigerator
1-3 days
Store unhusked corn in the refrigerator. If husked, store kernels in an airtight container or plastic bag.
Freezer
8-12 months
For best quality, blanch corn on the cob for 7-11 minutes (depending on size) or cut kernels off the cob and blanch for 4 minutes before freezing. Pack in airtight freezer bags or containers.
Signs of Spoilage
- Mold growth on kernels or husk
- Slimy or mushy texture
- Sour or off odor
- Significant discoloration or shriveling
Room Temperature Safety
40°F–140°F (4°C–60°C)
Perishable foods, including fresh corn, should not be left at room temperature for more than 2 hours (or 1 hour if the temperature is above 90°F/32°C). Bacteria grow rapidly in the danger zone.
Safe Handling
Wash fresh corn under running water before preparing or consuming.
Avoid cross-contamination by keeping fresh produce separate from raw meat, poultry, and seafood.
Cook corn to desired doneness; internal temperature is not a critical safety factor for fresh produce, but proper cooking ensures palatability.
