Fresh pasta contains eggs and moisture, making it highly perishable. It must be refrigerated or frozen immediately after purchase.
Refrigerator
1-2 days
Store fresh linguine in its original sealed packaging or an airtight container in the coldest part of the refrigerator (40°F or below). Do not wash before storing.
Freezer
1-2 months
To freeze fresh linguine, lightly dust with flour, coil into individual nests, and place on a baking sheet to freeze until firm. Once frozen, transfer to an airtight freezer bag or container (0°F or below). Cook directly from frozen.
Signs of Spoilage
- Sour or off odor
- Slimy or sticky texture
- Discoloration (e.g., gray or green spots)
- Presence of mold
Room Temperature Safety
The 'Danger Zone' for food is between 40°F (4°C) and 140°F (60°C), where bacteria can multiply rapidly.
Refrigerate or freeze fresh linguine promptly after purchase. If left out in the danger zone, bacteria can grow to dangerous levels, even if it doesn't show visible signs of spoilage.
