Fresh mushrooms should be refrigerated for optimal quality and safety. Room temperature storage will significantly shorten their shelf life and can lead to rapid spoilage.
Refrigerator
4-7 days
Store unwashed fresh mushrooms in their original packaging or in a paper bag in the refrigerator. Avoid storing in airtight containers as this can trap moisture and accelerate spoilage. Do not wash until just before use.
Freezer
10-12 months (cooked or blanched)
For best quality, clean and slice mushrooms, then blanch or sauté them before freezing. Pack in airtight freezer bags or containers. While raw mushrooms can be frozen, their texture may become mushy upon thawing.
Signs of Spoilage
- Slimy or sticky texture
- Dark spots or discoloration
- Strong, unpleasant odor
- Visible mold growth
- Dried out or shriveled appearance
Room Temperature Safety
The 'Danger Zone' for bacterial growth is between 40°F (4°C) and 140°F (60°C).
To ensure safety, fresh mushrooms should be refrigerated promptly after purchase and not left out at room temperature for extended periods.
Safe Handling
Wash mushrooms gently under cool running water or wipe with a damp cloth just before use, not in advance.
Avoid cross-contamination by keeping raw mushrooms separate from other foods, especially raw meats, poultry, and seafood.
Cook mushrooms to desired doneness; while some varieties can be eaten raw, cooking enhances flavor and can improve digestibility.
