Pantry
2-3 days
Store unripe tomatoes at room temperature away from direct sunlight until ripe. Once ripe, store at room temperature for up to 2-3 days for best flavor, or refrigerate to extend shelf life.
Refrigerator
5-7 days
Store ripe tomatoes in the refrigerator for best quality and to extend shelf life. Place in a plastic bag or container to prevent moisture loss.
Freezer
8-12 months
Wash and core tomatoes. They can be frozen whole, sliced, or pureed. For best quality, blanch whole tomatoes for 30-60 seconds before freezing, or peel and crush them. Pack in freezer-safe bags or containers, leaving headspace.
Signs of Spoilage
- Soft spots or mushy texture
- Mold growth (fuzzy white, green, or black spots)
- Off-odor (sour, fermented, or musty smell)
- Leaking or weeping liquid
- Significant discoloration or shriveling
Room Temperature Safety
40°F–140°F (4°C–60°C)
While whole, uncut fresh tomatoes are less prone to rapid bacterial growth than some other produce, cut tomatoes are considered a time/temperature control for safety (TCS) food. Refrigerate cut tomatoes within 2 hours. Discard any cut tomatoes left in the danger zone for too long.
Safe Handling
Wash fresh tomatoes under running water before eating, cutting, or cooking.
Avoid cross-contamination by using separate cutting boards and utensils for produce and raw meat/poultry/seafood.
Discard any tomatoes that are bruised, cut, or damaged, as bacteria can enter through breaks in the skin.
