Store whole, unpeeled garlic bulbs in a cool (50-60°F or 10-15°C), dark, dry place with good air circulation. Do not store in airtight containers or plastic bags as this can promote mold growth.

Refrigerating whole, unpeeled garlic bulbs can cause them to sprout or become moldy. Peeled garlic cloves should be stored in an airtight container and used within 1 week. Garlic in oil mixtures must be refrigerated immediately and used within 7 days.
Freezer
10-12 months
Garlic can be frozen whole (peeled), chopped, or minced. Store in an airtight container or freezer bag. Freezing does not require blanching.
Signs of Spoilage
- Soft spots or mushy texture
- Visible mold growth (green, black, or white fuzz)
- Strong, unpleasant, or 'off' odor
- Significant sprouting (while not unsafe, indicates aging and flavor degradation)
- Yellowing or browning of cloves
Room Temperature Safety
40°F–140°F (for prepared garlic products, not whole bulbs).
Whole, unpeeled garlic bulbs are best stored at cool room temperatures (50-60°F or 10-15°C) in a well-ventilated area, which is below the typical danger zone for perishable foods. However, any garlic product that has been peeled, cut, or mixed with oil becomes perishable and must adhere to the 2-hour rule.
Safe Handling
Do not store garlic in oil at room temperature due to the risk of botulism. If making garlic-in-oil mixtures, refrigerate immediately and use within 7 days, or freeze.
Wash hands thoroughly with soap and water before and after handling garlic.
Prevent cross-contamination by keeping garlic separate from raw meats, poultry, and seafood.
