Refrigerator

Do not store gelato in the refrigerator; it will melt and enter the danger zone, becoming a food safety risk.
Freezer
2-4 months for best quality, safe indefinitely
Keep gelato at 0°F (-18°C) or below. Store in an airtight container to prevent freezer burn and absorption of odors. Keep the container tightly sealed.
Signs of Spoilage
- Excessive ice crystals (beyond normal freezer burn)
- Off-flavor or sour taste
- Unusual odor
- Gummy or sticky texture (after melting and refreezing)
- Visible mold (rare if kept frozen, but indicates spoilage if present)
Room Temperature Safety
40°F–140°F (4°C–60°C)
Do not leave gelato at room temperature for more than 2 hours. If the temperature is above 90°F (32°C), do not leave out for more than 1 hour. Discard any gelato left in the danger zone for too long.
Safe Handling
Do not thaw and refreeze gelato, as this can affect texture and quality and increase the risk of bacterial growth.
Serve gelato quickly after removing from the freezer to minimize time spent at room temperature.
Always use clean utensils when scooping to prevent cross-contamination.
