Pantry

Store unpeeled, whole ginger in a cool, dark, dry place, such as a pantry or cupboard. Do not store in a plastic bag as it can promote mold.

Refrigerator

2-3 weeks

Store unpeeled, whole ginger in a paper bag or wrapped in a paper towel, then placed in a plastic bag in the crisper drawer of the refrigerator. This helps to control moisture.

Freezer

3-6 months

Fresh ginger can be frozen whole, unpeeled, or peeled and grated/sliced. Store in an airtight freezer bag or container. It can be grated or sliced directly from frozen.

  • Strong, unpleasant, or sour odor

Room Temperature Safety

Fresh ginger should not be left at room temperature for more than 2 hours. If the ambient temperature is above 90°F (32°C), it should not be left out for more than 1 hour to prevent rapid bacterial growth.
