Raw foie gras is highly perishable and should not be stored at pantry temperatures. Fully cooked, commercially sterile canned or jarred foie gras can be stored in the pantry until opened, then refrigerated.
Refrigerator
1-2 days
Store raw foie gras in its original packaging or tightly wrapped in plastic wrap, then placed in an airtight container or freezer bag. Keep it in the coldest part of the refrigerator (40°F/4°C or below) and place on a plate to prevent any drips from contaminating other foods.
Freezer
3-4 months
For best quality, wrap raw foie gras tightly in heavy-duty aluminum foil or freezer wrap, or place in a freezer-safe bag, removing as much air as possible. Freeze at 0°F (-18°C) or below. Thaw in the refrigerator.
Signs of Spoilage
- Sour or off-odor
- Slimy or sticky texture
- Discoloration (e.g., grayish or greenish tint)
- Mold growth
Room Temperature Safety
40°F–140°F (4°C–60°C)
Perishable foods, including raw foie gras, should not be left at room temperature for more than 2 hours. If the temperature is above 90°F (32°C), it should not be left out for more than 1 hour, as bacteria multiply rapidly in the danger zone.
Safe Handling
Cook raw foie gras to an internal temperature of 165°F (74°C) as measured with a food thermometer.
Wash hands thoroughly with soap and water for at least 20 seconds before and after handling raw foie gras.
Prevent cross-contamination by using separate cutting boards, plates, and utensils for raw foie gras and ready-to-eat foods.
Thaw frozen foie gras in the refrigerator, never at room temperature. Allow adequate time for thawing (e.g., overnight for small amounts).
