Once opened, gorgonzola should be refrigerated immediately. Unopened, it may last longer, but refrigeration is best for quality and safety.
Refrigerator
1 to 2 weeks
Store opened gorgonzola tightly wrapped in plastic wrap, foil, or in an airtight container to prevent drying out and absorbing odors. Keep at 40°F (4°C) or below.
Freezer
Not recommended for freezing due to texture changes
While safe indefinitely, freezing gorgonzola is not recommended by USDA due to significant changes in texture, which can become crumbly or mealy upon thawing.
Signs of Spoilage
- Unusual mold growth (beyond the intentional blue veins)
- Off-odor (stronger, ammonia-like, or sour smell)
- Slimy or sticky texture
- Significant discoloration (beyond normal aging)
Room Temperature Safety
40°F–140°F
Perishable foods, including gorgonzola, should not be left out at room temperature for more than 2 hours. If the ambient temperature is above 90°F (32°C), food should not be left out for more than 1 hour.
Safe Handling
Always keep gorgonzola refrigerated at 40°F (4°C) or below.
Wrap cheese tightly to prevent mold growth and absorption of other food odors.
Avoid cross-contamination by using clean utensils and cutting boards when handling cheese.
