Gouda is a perishable dairy product. For optimal quality and safety, always store in the refrigerator. Do not store opened Gouda at room temperature.
Refrigerator
Unopened package: 2-4 months; Opened package: 3-4 weeks
Store Gouda in its original packaging until opened. Once opened, rewrap tightly in plastic wrap or aluminum foil, or place in an airtight container to prevent drying out and absorb odors. Store in the coldest part of the refrigerator.
Freezer

While safe to freeze, the texture of Gouda may become crumbly or mealy after thawing. For best results, wrap tightly in plastic wrap, then in aluminum foil, or place in a freezer-safe bag before freezing. Thaw in the refrigerator.
Signs of Spoilage
- Visible mold growth (other than intentional mold on certain cheeses, which Gouda does not have)
- Off-odor, sour, or ammonia-like smell
- Slimy or sticky texture
- Significant discoloration or hardening beyond its normal state
Room Temperature Safety
The 'Danger Zone' for bacterial growth is between 40°F (4°C) and 140°F (60°C).
Promptly refrigerate Gouda after purchase and after each use to keep it out of the danger zone. Discard any Gouda left at room temperature beyond the recommended time limits.
Safe Handling
Always wash hands with soap and water before and after handling cheese.
Avoid cross-contamination by using separate cutting boards and utensils for cheese and raw meats.
Do not leave Gouda at room temperature (between 40°F and 140°F) for more than 2 hours. If the ambient temperature is above 90°F (32°C), do not leave out for more than 1 hour.
If freezing, consider grating or cubing the cheese before freezing for easier use after thawing.
