For best quality and safety, always store Gouda cheese in the refrigerator, even if unopened.

Refrigerator

Unopened: 2-4 months; Opened: 3-4 weeks

Store tightly wrapped in plastic wrap, foil, or wax paper, then placed in an airtight container to prevent drying out and absorbing odors. Store in the warmest part of the refrigerator, such as the cheese drawer.

Freezer

6 months

Wrap tightly in plastic wrap, then in aluminum foil or a freezer bag. Freezing may alter the texture, making it more crumbly, but it remains safe to eat.

Signs of Spoilage

  • Visible mold (other than intentional mold on mold-ripened cheeses)
  • Off-odor (sour, ammonia-like)
  • Slimy or sticky texture
  • Discoloration

Room Temperature Safety

2-hour rule (1 hour if ambient temperature is above 90°F/32°C)

40°F–140°F (4°C–60°C)

Do not leave Gouda cheese at room temperature for more than 2 hours. If left out longer, discard it.

If mold appears on hard or semi-hard cheese, cut off at least 1 inch around and below the mold spot. Do not use the knife that cut the mold to cut other parts of the cheese. Discard soft cheeses with mold.
