Store in a cool, dry place if unopened, but refrigeration is best for quality and safety once opened. High humidity can encourage mold growth.
Refrigerator
3-4 weeks
Wrap tightly in plastic wrap or foil, or place in an airtight container to prevent drying out and absorption of odors. Store in the warmest part of the refrigerator, such as the cheese drawer.
Freezer
6 months
Wrap tightly in plastic wrap, then in heavy-duty foil, or place in a freezer-safe bag. Freezing may alter texture, making it more crumbly, but it remains safe to eat. Best for grating or cooking after thawing.
Signs of Spoilage
- Visible mold (other than intentional mold on certain cheeses)
- Off-odor, such as a sour or ammonia-like smell
- Slimy or sticky texture
- Significant discoloration
Room Temperature Safety
The danger zone for food is between 40°F (4°C) and 140°F (60°C), where bacteria can multiply rapidly.
Promptly refrigerate Graviera after use to minimize time spent in the danger zone.
Safe Handling
Always wash hands before and after handling cheese.
Avoid cross-contamination by using separate cutting boards and utensils for cheese and raw meats.
If mold appears on hard cheese, you can cut off at least 1 inch around and below the moldy spot. Be careful not to touch the mold with the knife. Discard soft cheeses with mold.
Keep cheese refrigerated at 40°F (4°C) or below.
