Fresh green beans should be refrigerated for optimal quality and safety. Pantry storage is not suitable for fresh produce.
Refrigerator
3-5 days
Store unwashed fresh green beans in a plastic bag or perforated container in the crisper drawer of the refrigerator.
Freezer
8-12 months for best quality, safe indefinitely
Blanch green beans for 3 minutes in boiling water, then cool quickly in ice water. Drain thoroughly, pack into airtight freezer bags or containers, removing as much air as possible.
Signs of Spoilage
- Slimy or sticky texture
- Soft spots or excessive wilting
- Mold growth (fuzzy white, green, or black spots)
- Off-odor
Room Temperature Safety
40°F–140°F (4°C–60°C)
Do not leave fresh green beans at room temperature for more than 2 hours. If the temperature is above 90°F (32°C), do not leave out for more than 1 hour to prevent rapid bacterial growth.
Safe Handling
Wash fresh green beans thoroughly under running water before preparing or eating.
Prevent cross-contamination by keeping fresh produce separate from raw meat, poultry, and seafood.
