Store whole, raw cabbage in the refrigerator for optimal freshness and safety. A cool, dark place (like a root cellar) might extend shelf life, but a typical pantry is too warm.

Refrigerator

1-2 months

Store whole, raw cabbage unwashed in a plastic bag in the crisper drawer of the refrigerator. Do not wash until ready to use. Once cut, wrap tightly and use within 3-5 days.

Freezer

10-12 months

Cabbage should be blanched before freezing. Wash, cut into wedges or shred, blanch in boiling water for 1.5 minutes, cool quickly in ice water, drain thoroughly, pack into airtight freezer bags or containers, and freeze.

Signs of Spoilage

  • Soft or slimy spots on the leaves
  • Significant discoloration (yellowing or browning)
  • Foul or off-odor
  • Visible mold growth
  • Excessive wilting or shriveling of leaves

Room Temperature Safety

Perishable foods, including cut cabbage, should not be left at room temperature for more than 2 hours. If the ambient temperature is above 90°F (32°C), this time is reduced to 1 hour.

The 'Danger Zone' for bacterial growth is between 40°F (4.4°C) and 140°F (60°C).

Whole, uncut cabbage can tolerate room temperature for a short period, but for optimal quality and safety, it should be refrigerated promptly. Cut cabbage must be refrigerated or consumed within the 2-hour rule.
