Eggplant is best stored in cooler temperatures. If stored at room temperature, use within 1-2 days. Avoid direct sunlight.
Refrigerator
5-7 days
Store unwashed eggplant in a plastic bag or perforated bag in the crisper drawer of the refrigerator. Do not wash until ready to use.
Freezer
10-12 months
Eggplant should be blanched before freezing. Wash, peel (optional), slice or dice, blanch for 4 minutes, cool quickly in ice water, drain, pack into freezer bags or containers, leaving headspace.
Signs of Spoilage
- Soft spots or mushy texture
- Brown or discolored areas
- Mold growth (fuzzy white, green, or black spots)
- Slimy or sticky surface
- Off-odor
Room Temperature Safety
The 'Danger Zone' for bacterial growth is between 40°F (4°C) and 140°F (60°C).
While eggplant is not a TCS food, prolonged exposure to room temperature can accelerate spoilage. For best quality and to prevent rapid deterioration, refrigerate promptly after purchase.
Safe Handling
Wash hands with soap and water for at least 20 seconds before and after handling fresh produce.
Wash eggplant under cool running water just before eating or preparing. Do not use soap or detergents.
Cut away any bruised or damaged areas before eating.
Avoid cross-contamination by using separate cutting boards and utensils for produce and raw meat, poultry, or seafood.
Cook eggplant to desired tenderness; there is no specific internal temperature for eggplant as it is not a TCS (Time/Temperature Control for Safety) food, but ensure it is thoroughly cooked if intended for hot dishes.
