Store in a cool, dry place for very short-term use (1-2 days) if refrigeration is not immediately available. For best quality and safety, refrigerate promptly.
Refrigerator
1-2 weeks
Store unwashed in a plastic bag or crisper drawer. Do not wash until ready to use to prevent spoilage.
Freezer
8-12 months
Wash, core, and slice or chop peppers. Spread in a single layer on a baking sheet to freeze, then transfer to freezer bags. Blanching is not required but can help maintain quality.
Signs of Spoilage
- Soft spots or mushy texture
- Wrinkled or shriveled skin
- Mold growth (fuzzy white, green, or black spots)
- Discoloration (dark spots or dullness)
- Off-odor
Room Temperature Safety
The 'Danger Zone' for bacterial growth is between 40°F (4°C) and 140°F (60°C).
While fresh peppers are less prone to rapid bacterial growth than meats, their quality and safety degrade quickly in the danger zone. Always refrigerate promptly after purchase and preparation.
Safe Handling
Wash hands with soap and water for at least 20 seconds before and after handling fresh produce.
Wash peppers thoroughly under running water before cutting or eating, even if you plan to peel them.
