Store unripe green mangoes at room temperature (60-70°F or 15-21°C) until they ripen. Keep away from direct sunlight. Placing them in a paper bag can speed up ripening.
Refrigerator

Refrigerating unripe green mangoes can stop the ripening process and may cause chilling injury, affecting flavor and texture. Only refrigerate mangoes once they are ripe to extend their shelf life.
Freezer

Freezing whole, unpeeled mangoes is not recommended due to quality degradation upon thawing. For freezing, peel, pit, and cut ripe mangoes into cubes or slices, then freeze in a single layer on a baking sheet before transferring to airtight freezer bags or containers. Properly prepared, cut mangoes can be frozen for up to 10-12 months.
Signs of Spoilage
- Soft spots or mushy texture (beyond normal ripening softness)
- Mold growth (fuzzy white, green, or black spots)
- Sour, fermented, or off-odor
- Significant discoloration or dark spots that are not part of normal ripening
Room Temperature Safety
The 'Danger Zone' for bacterial growth is between 40°F (4°C) and 140°F (60°C). Perishable foods should not remain in this temperature range for extended periods.
Unripe whole mangoes can be stored at room temperature to ripen. Once ripe, or if cut, they become perishable and must be refrigerated promptly to prevent bacterial growth.
Safe Handling
Wash mangoes thoroughly under running water before peeling or cutting to remove any dirt or contaminants.
Use a clean cutting board and knife to prevent cross-contamination.
Avoid leaving cut mangoes at room temperature for more than 2 hours (1 hour if the temperature is above 90°F/32°C).
