Room Temperature Safety
The 'Danger Zone' for food is between 40°F (4°C) and 140°F (60°C), where bacteria can multiply rapidly.
Promptly refrigerate or freeze cooked chicken within 2 hours of cooking or removal from heat. Discard any cooked chicken left in the danger zone for too long.
Safe Handling
Reheat all leftovers, including grilled chicken, to an internal temperature of 165°F (74°C) as measured with a food thermometer.
Prevent cross-contamination by using separate cutting boards and utensils for raw and cooked foods.
Wash hands thoroughly with soap and water before and after handling food.
Never leave cooked chicken at room temperature for more than 2 hours (1 hour if the temperature is above 90°F/32°C).
