Raw ground beef should never be stored at room temperature or in the pantry due to rapid bacterial growth.
Refrigerator
1-2 days
Store raw ground beef in its original packaging or in a clean, covered container on the lowest shelf of the refrigerator to prevent juices from dripping onto other foods. Ensure refrigerator temperature is 40°F (4°C) or below.
Freezer
3-4 months
For best quality, freeze ground beef in its original packaging or rewrap tightly in heavy-duty foil, plastic wrap, or freezer paper, or place in a freezer bag, removing as much air as possible. Label with the date.
Signs of Spoilage
- Sour or off-odor
- Slimy or sticky texture
- Dull brown or grayish discoloration (fresh ground beef should be bright red or purplish-red)
- Mold growth
Room Temperature Safety
The 'Danger Zone' for bacterial growth is between 40°F (4°C) and 140°F (60°C).
Always refrigerate or freeze raw ground beef promptly. Discard any ground beef left in the danger zone for longer than the recommended time limits.
Safe Handling
Cook all ground beef to an internal temperature of 160°F (71.1°C) as measured with a food thermometer.
Prevent cross-contamination by keeping raw ground beef separate from other foods, especially ready-to-eat items.
Wash hands thoroughly with soap and water for at least 20 seconds before and after handling raw ground beef.
Clean and sanitize all surfaces, cutting boards, and utensils that come into contact with raw ground beef.
Thaw frozen ground beef in the refrigerator, in cold water (changing water every 30 minutes), or in the microwave. Never thaw at room temperature.
