Ground beef is highly perishable and should not be stored at pantry temperatures.
Refrigerator
1-2 days
Store raw ground beef in its original packaging or in a clean container on the lowest shelf of the refrigerator to prevent drips onto other foods. Ensure refrigerator temperature is 40°F (4°C) or below.
Freezer
3-4 months
For best quality, wrap ground beef tightly in heavy-duty aluminum foil, plastic wrap, or freezer paper, or place in a freezer bag, removing as much air as possible. Label with the date.
Signs of Spoilage
- Sour or off-odor
- Slimy or sticky texture
- Dull, grayish-brown discoloration
Room Temperature Safety
40°F–140°F (4°C–60°C)
Do not leave raw ground beef at room temperature for more than 2 hours. If the ambient temperature is above 90°F (32°C), it should not be left out for more than 1 hour. Discard any ground beef left in the danger zone for longer than these times.
Safe Handling
Cook all ground beef to an internal temperature of 160°F (71.1°C) as measured with a food thermometer.
Wash hands thoroughly with soap and water before and after handling raw ground beef.
Prevent cross-contamination by keeping raw ground beef separate from other foods, especially ready-to-eat items. Use separate cutting boards, plates, and utensils.
Thaw frozen ground beef in the refrigerator, in cold water (changing water every 30 minutes), or in the microwave. Never thaw on the counter.
Refrigerate or freeze cooked ground beef within 2 hours (1 hour if above 90°F/32°C).
