Do not store raw ground beef at room temperature. Refrigerate or freeze immediately.
Refrigerator
1-2 days
Store raw ground beef in its original packaging or a sealed container on the lowest shelf of the refrigerator to prevent juices from dripping onto other foods. Keep refrigerator temperature at 40°F (4°C) or below.
Freezer
3-4 months
For best quality, wrap raw ground beef tightly in heavy-duty aluminum foil, plastic wrap, or freezer paper, or place in a heavy-duty freezer bag or airtight container. Label with the date.
Signs of Spoilage
- Sour or off-odor
- Slimy or sticky texture
- Dull, grayish-brown color (fresh ground beef is typically bright red)
- Mold growth
Room Temperature Safety
40°F–140°F (4°C–60°C)
Perishable foods, including raw ground beef, should not be left at room temperature for more than 2 hours. If the ambient temperature is above 90°F (32°C), the limit is 1 hour before it should be discarded.
Safe Handling
Cook all ground beef to an internal temperature of 160°F (71.1°C) as measured with a food thermometer.
Wash hands thoroughly with soap and water before and after handling raw ground beef.
Prevent cross-contamination by using separate cutting boards, plates, and utensils for raw ground beef and ready-to-eat foods.
Thaw frozen ground beef in the refrigerator, in cold water, or in the microwave. Never thaw at room temperature.
Marinate ground beef in the refrigerator, not on the counter.
