Raw ground beef is highly perishable and should not be stored at room temperature. Refrigerate or freeze immediately.
Refrigerator
1-2 days
Store raw ground beef in its original packaging or in a clean, shallow container to prevent juices from dripping onto other foods. Place in the coldest part of the refrigerator (40°F/4°C or below).
Freezer
3-4 months
For best quality, wrap raw ground beef tightly in heavy-duty aluminum foil, freezer paper, or place in freezer bags, removing as much air as possible. Label with the date.
Signs of Spoilage
- Sour or off-odor
- Slimy or sticky texture
- Dull, grayish-brown color (while some discoloration is normal, significant changes indicate spoilage)
- Mold growth
Room Temperature Safety
The 'Danger Zone' for bacterial growth is between 40°F (4°C) and 140°F (60°C).
Always refrigerate or freeze raw ground beef promptly. Discard any ground beef left in the danger zone for longer than the recommended time limits.
Safe Handling
Cook all ground beef to an internal temperature of 160°F (71.1°C) as measured with a food thermometer.
Wash hands thoroughly with soap and water before and after handling raw ground beef.
Use separate cutting boards, plates, and utensils for raw ground beef and cooked foods to prevent cross-contamination.
Thaw frozen ground beef in the refrigerator, in cold water (changing water every 30 minutes), or in the microwave. Never thaw at room temperature.
Marinate ground beef in the refrigerator, not on the counter.
