Raw ground duck should not be stored at room temperature. Refrigerate or freeze immediately.
Refrigerator
1-2 days
Store raw ground duck in its original packaging or a sealed container on the lowest shelf of the refrigerator to prevent juices from dripping onto other foods. Keep refrigerator temperature at 40°F (4°C) or below.
Freezer
3-4 months
For best quality, wrap raw ground duck tightly in heavy-duty freezer paper, aluminum foil, or place in heavy-duty freezer bags. Label with the date. Thaw safely in the refrigerator, cold water, or microwave.
Signs of Spoilage
- Sour or off-odor
- Slimy or sticky texture
- Dull, grayish-green, or discolored appearance
- Mold growth
Room Temperature Safety
40°F–140°F
Raw ground duck should not be left at room temperature for more than 2 hours. If the ambient temperature is above 90°F (32°C), the limit is 1 hour. Bacteria multiply rapidly in the 'Danger Zone' (40°F–140°F).
Safe Handling
Cook all ground poultry, including ground duck, to an internal temperature of 165°F (74°C) as measured with a food thermometer.
Prevent cross-contamination by keeping raw ground duck separate from other foods. Use separate cutting boards, plates, and utensils for raw and cooked foods.
Wash hands thoroughly with soap and water for at least 20 seconds before and after handling raw ground duck.
Thaw frozen ground duck in the refrigerator, in cold water (changing water every 30 minutes), or in the microwave. Never thaw at room temperature.
