Raw ground pork should not be stored at pantry temperatures. Refrigerate or freeze immediately.
Refrigerator
1-2 days
Store raw ground pork in its original packaging or a sealed container on the lowest shelf of the refrigerator to prevent juices from dripping onto other foods. Keep refrigerator temperature at 40°F (4°C) or below.
Freezer
3-4 months
For best quality, wrap ground pork tightly in heavy-duty aluminum foil, plastic wrap, or place in freezer bags, removing as much air as possible. Label with the date of freezing.
Signs of Spoilage
- Sour or off odor
- Sticky, slimy, or tacky texture
- Dull, grayish-brown, or green discoloration
- Mold growth
Room Temperature Safety
40°F–140°F (4°C–60°C)
Raw ground pork should not be left at room temperature for more than 2 hours. If the ambient temperature is above 90°F (32°C), it should not be left out for more than 1 hour, as bacteria multiply rapidly in the danger zone.
Safe Handling
Cook all ground pork to an internal temperature of 160°F (71.1°C) as measured with a food thermometer.
Prevent cross-contamination by keeping raw ground pork separate from other foods. Use separate cutting boards, plates, and utensils for raw and cooked meats.
Wash hands thoroughly with soap and water for at least 20 seconds before and after handling raw ground pork.
Thaw frozen ground pork safely in the refrigerator, in cold water (changing water every 30 minutes), or in the microwave. Never thaw at room temperature.
